Back of the pantry cookies!
Maybe you’ve got some extra time on lunch and want some nice, warm cookies… but your pantry is a little bare.
Ingredients:
2 ¼ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 cup softened butter
1 ½ cups white sugar
2 large eggs
2 tsp vanilla extract (optional, but really good!)
1 tablespoon instant espresso (optional)
1 cup chocolate chips, toffee chips, and/or mini marshmallows.
Instructions:
- Preheat the oven to 350 degrees Fahrenheit
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, and the optional (but definitely great) vanilla extract.
- In a separate bowl, mix your flour, baking soda, salt, and instant espresso.
- Combine both bowls of ingredients until just combined.
- Then, stir in either the chocolate chips, toffee chips, or mini marshmallows (or all of them).
*my favorite combo is toffee and marshmallows
- Optionally, chill the dough for thirty minutes.
- Using a cookie scoop or ice cream scoop, scoop your cookies onto a lined cookie sheet.
- Bake for 10-12 minutes and allow to cool fully before enjoying!
