While at home, you may be struggling to find time to cook between breaks from class. Luckily, we’ve got just the right thing to help! Between breaks and lunch, here are some quick dessert ideas to keep your grades sweet and your food sweeter!

5-Minute Chocolate Mug Cake

Ingredients:

2 ½ tbsp all-purpose flour

2 ½ tbsp white sugar

1 tbsp unsweetened cocoa powder

¼ tsp baking powder

Pinch of salt

2 tbsp milk

1 tsp vegetable oil

1 small egg

2 tbsp chocolate chips

 

Instructions:

  1. Mix together the flour, sugar, cocoa powder, baking powder, and salt.
  2. Then, mix together the milk, oil, egg, and stir until well combined. Gently fold in the chocolate chips.
  3. Microwave your cake for 45 seconds to 1 minute until fully cooked, being sure not to overcook it.
  4. Top with frosting, whipped cream, more chocolate, or eat it plain and enjoy!

Back of the pantry cookies!

Maybe you’ve got some extra time on lunch and want some nice, warm cookies… but your pantry is a little bare.

 

Ingredients:

2 ¼ cups all-purpose flour

1 tsp baking soda

½ tsp salt

1 cup softened butter

1 ½ cups white sugar

2 large eggs

2 tsp vanilla extract (optional, but really good!)

1 tablespoon instant espresso (optional)

1 cup chocolate chips, toffee chips, and/or mini marshmallows.

 

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, and the optional (but definitely great) vanilla extract.
  4. In a separate bowl, mix your flour, baking soda, salt, and instant espresso.
  5. Combine both bowls of ingredients until just combined.
  6. Then, stir in either the chocolate chips, toffee chips, or mini marshmallows (or all of them).

*my favorite combo is toffee and marshmallows

  1. Optionally, chill the dough for thirty minutes.
  2. Using a cookie scoop or ice cream scoop, scoop your cookies onto a lined cookie sheet.
  3. Bake for 10-12 minutes and allow to cool fully before enjoying!

Strawberry Icebox “Cake”

If you’re willing to wait until the end of your school day, here’s an easy prep, long wait, dessert that you will adore!

 

Ingredients:

5 cups sweetened whipped cream

11 rectangular graham cracker sheets

3 cups chopped strawberries

 

Instructions:

  1. In a square baking dish, place a thin layer of whipped cream on the bottom of the dish.
  2. Then, layer on graham crackers and another layer of whipped cream.
  3. Sprinkle some of your strawberries on top, and repeat steps two and three until all ingredients are gone.
  4. Chill for three or more hours. Then, cut and enjoy!
