I’ve lived in Costa Rica for all my life and as you can know hispanic food is delicious. Today I am gonna share a recipe that my abuela used to make every time I had a bad day or I wasn’t feeling good.

My abuela has so much experience in the cooking area. She’s the older sister of her family and when she was little her parents were never home because there family was poor and they needed to work hard all day long, so my abuela was the one that took care of her 7 younger siblings. So lets say she has many many years of experience.

This recipe is very traditional and one of the people’s favorite. The creators of this exquisite.dish were the indigenous citizens almost 1000 years ago. Costa Rica is an agricultural country, almost 80% rural. If you go to the amazing mountains in Costa Rica you’ll see all the crops and farmers selling their organic and fresh products. 8000 years ago cacao and corn wear highly desire and there was plenty everywhere.

This dish is called  “chorreada” and is prepared with corn. Its like a pancake for the United States or a like crepes for France or Europe. It is usually served with freshly brewed coffee and with sour cream or cream cheese on top. They are usually served in “sodas” (street-side dinners that serve local cuisine) but they are very common in household  and it is  usually eat it at evening or as we like to call “coffee time” that is at most likely 6 pm.

After learning the history of this deliciousness lets begin with the ingredients:

  • 2 cups of fresh corn (about 5 ears of corn)
  • 1/2 cup of sugar
  • 1/4 cup flour
  • 2 eggs
  • 3 tablespoons of butter
  • 1/3 cup of milk
  • and butter to ad to the the pan after each chorreada

It takes about 20 minutes or less to prepare. It serves for 12.

The first step is to combine all the ingredients in a food processor and blend until the mixture is crumbly. Then try in butter to form round pancakes for a couple minutes. Turn over and fry for a couple more minutes. Serve warm with sour cream or cream cheese on top.

And that’s it, such an easy and exquisite recipe in less than 20 min. I personally love this recipe because it makes me remember s lot of my childhood memories. Well after getting nostalgic, I hope you guys enjoy this amazing recipe and share it with your love ones.
